Apprentice Chefs From Kerry College Create Meal For Frontline Staff At UHK

TRALEE Commis Chef apprentices, based in Kerry College, Clash Campus, delivered a meal to frontline workers at University Hospital Kerry on Tuesday.

As part of their capstone module and the final assessment of their apprenticeship, the students must execute a culinary event.

Given the circumstances and restrictions of COVID-19, the Tralee class have changed the dynamic of their final assessment from a ‘sit down’ meal to a delivery service for HSE staff / ambulance service staff.

Diners enjoyed a starter of pickled mackerel (with apple and horseradish relish, smoked Scotia Glen potato and beetroot), mains was pork (velvet pork belly, bacon crumb fillet bon bon, ragged jack kale, Maharees carrot and mustard alioi, dessert was wild berry mousse (with dark chocolate ganache, mango mirror glaze) and finally Dingle Gin truffles and strawberry truffles completed the feast.

“We are delighted to provide a 4-course lunch to our fantastic frontline Ambulance team at Kerry General Hospital,” said Mick Ryan, Culinary Arts Instructor.

“We have designed a menu whilst bearing sustainability and ethical farming methods in mind, with all the ingredients grown or produced by some of our fantastic local producers in Kerry from garlic, rugged jack kale and beetroot supplied by Manna Foods, to wild blackberries, potatoes and Dingle gin in our truffle course!”

“We have also reduced our use of plastics by collecting ingredients in reusable containers from local shops and have supplied the Ambulance team with their lunch in sustainable packaging.  This is an important milestone for us to reach the culmination of our two year Commis Chef apprenticeship programme with Kerry ETB and we are delighted to share this experience with the hard working Ambulance team during this time.’’

The group of students involved in delivering the meal were, John McGill (Butler Arms Hotel, Waterville), James McGrath (Murphys Bar & Restaurant, Killarney), Pal Palfi (Great Southern Hotel, Killarney), Marcin Wisniewski (The Rose Hotel, Tralee) and David Culleton (Croi Restaurant, Tralee).
