Kerry Chef To Get His Own Cookery Show On Virgin Media TV

A KERRY-BASED chef has been snapped up by Virgin Media TV for a new cookery show which will be beamed into tens of thousands of homes.

Killarney restaurateur Paul Treyvaud has signed contracts with the station for the six-programme series which will see him preparing and cooking several delightful dishes.

The 30-minute slots, to be called Treyvaud’s Kitchen, have already been filmed at his home in Kenmare and the series is produced and directed by Enda Grace of Dundara Productions and distributed by Tralee-based Brian Hurley of Big Handsome Media.

“I’ll be concentrating on recipes that everybody can relate to, using ingredients everyone has immediate access to,” said Paul who runs Treyvaud’s Restaurant in Killarney with his chef brother Mark.

“The focus is on proper cooking methods, proper seasoning and proper techniques and one ingredient I always like to use is laughter so it will be a bit of fun,” he added.

“There is absolutely no chance of using any ingredients that people have never even heard of and they won’t have to go running to the shops to try to find something when they don’t even know what it looks like”.

Paul came to the attention of the Virgin Media producers when he appeared in a number of guest cooking slots on Ireland AM with presenters Mark Cagney and Alan Hughes.

“They got a great reaction to that and they like the fact that what I do it original and it’s Irish. They will promote the new programme extensively on all the Virgin Media channels before the first in the series is broadcast before the summer,” Paul said.

Rachel Allen’s show takes in the Dingle Peninsula next Wednesday.

TOP chef, Rachel Allen, will be seen out west in the Dingle Peninsula on our TV screens this Wednesday as she travels  in search of local produce.

The popular show, Coastal Cooking, takes Rachel out of the kitchen and cooking her way around Ireland, for her crew and the colourful characters she meets along her journey, usually outdoors while braving the elements.

In the fifth episode of the series, airing on Wednesday, 21st October at 8.30pm Rachel will meet Dingle local Breege and join her on a cycling tour, taking a break to forage for herbs.

Rachel will also meet local potato producers, go on a boat trip to meet Fungi the dolphin and meet Kerry’s own ‘Weather Wizard’.

The Hotel Culinary Arts and Tourism Department of the IT Tralee are preparing to host their ‘Food 4 Thought’ event.

The Hotel Culinary Arts and Tourism Department (HCT) of the IT Tralee are preparing to host their ‘Food 4 Thought’ event on Wednesday, March 25 at the North Campus from 10am to 3pm.

The event which is now in its third year will feature a series of workshops and demonstrations that will all be offered free of charge and is designed to attract food industry professionals and food lovers alike on the day.

On the day, there will be chances for members of the public to enhance their cookery/baking skills workshops set to be held in the area of artisan bread making, cocktail making and the art of smoking amongst many others.

“We at IT Tralee want to share our knowledge and passion for food and hospitality to stimulate best practice in the region as well as highlighting our superb food producers and enabling them to develop their skills,” said TJ O’Connor, Head of Section at the HCT department.

There will also be the chance for visitors to sample the new food product range developed by the HCT departments third year BA culinary arts students.

There will be many talks held on the day with Mark Doe from ‘Just Cooking Cookery School’ along with Patricia Tehan head chef from ‘Carrig Country House’ being present on the day also.

The Chef’s Table: Cooking The Perfect Steak

Cooking the perfect steak is a lot easier than people make out. 
Okay it does take a little practice to test the degree of cooking by pressing the steak, but the more you cook steak the easier it becomes.

Firstly you need prime steak cuts such as fillet, striploin, rib eye or sirloin.
 Round steak etc… can be tough, especially when cooked well done.

Remove the steaks from the fridge 15 minutes before cooking.

 Resting the steak once cooked is vital to give you a tender steak.

Below is a recipe to cook the perfect fillet steak with garlic butter.

For the steaks:

• 4 fillet steaks, trimmed, 7-8 oz each
• 2 tablespoons rapeseed or olive oil
• Sea salt and freshly ground black pepper
• For the garlic butter
• 50g butter, preferably unsalted
• 3 garlic cloves, finely chopped
• sea salt and freshly ground black pepper
2 tablespoons freshly chopped parsley

1. Firstly cook the steaks. It is best to remove them from the fridge 15 minutes before cooking. Heat a chargrill pan over a high heat until smoking hot.

2. Once the pan is hot, rub the steaks with a little oil and season on both sides with salt and pepper.

3. Place the steaks on the chargrill pan and sear well for 4 minutes, turn the steaks and sear for 4 minutes on the other side. This will give you a medium rare steak.

For medium cook for 5-6 minutes on each side.

For well done it is best to place the steaks in a hot oven (200C/gas mark 6/ fan 190C) after searing on each side. They can then be cooked for a further 8-9 minutes.

4. Once the steaks are cooked to the desired degree, remove them from the pan and rest on a warm plate whilst you make the garlic butter.

5. Add the butter and garlic and to a pan and place on a low heat. Allow the butter to gently melt. Add the chopped parsley and season with salt and pepper.

6. Serve the steaks and drizzle over the garlic butter.
