ROUNDYS Bar in Tralee has shut its doors…but only for two weeks.

The popular bar had been run by Stewart Lyons for over four years, but the lease has expired and the owners have decided to take up the mantle again.

Alan and Francis Fitzgibbon will be reopening the bar in two weeks time. According to Francis, they will be closing for a refurbishment and a few other changes. They wished Stewart well in the future.

The bar first opened in 2007 and is the only bar in town with a living tree in the back. Francis said they plan to continue serving delicious cocktails, craft beer and regular beers to customers.

In an Instagram post last night, Stewart Lyons thanked all who made the pub such a success over the past number of years.

“It’s been an incredible four and a half years. A big thank you to everyone who has supported our blend of cocktails, craft beer, art and funk. It’s been emotional.”

SPONSORED: The Weekend Starts At Roundy’s As They Launch New Cocktail Menu

IT’S Friday, it’s set to be a sunny evening, so it’s time the hit to the town.

And Roundy’s is the perfect place to go this weekend as they launch their new cocktail menu.

The popular pub on Brogue Makers Lane (close to The Ashe Hotel) has 32 cocktails — half new, half “Roundy’s classics” — on the menu such as the ‘cotton candy cosmo’, ‘pornstar martini’, ‘lemondrop’ and the classic Mojito.

.

The new cocktails also include such innovations as a ‘popcorn old fashioned’ with popcorn syrup and popcorn garnish, a ‘blueberry gin sour with blueberry jam’, the ‘spice bag special’ served in a Chinese takeaway container and a ‘dark and stormy sharing cocktail’ that serves up to 10 people.

.

Also, a cold brew coffee Martini developed by Edwin Byrne, star barista at House of Coffee Tralee, using old barrack roaster cold brew coffee, brewed with cold water overnight for a smoother flavour, galliano, kahula and their house infused vanilla vodka.

“The cocktails were developed and are served by Rachel Templeman and Siobhan O’Connor, both CIT qualified mixologists,” explains Roundy’s owner, Stewart Lyons.

“We have gone in a Tiki direction with the new menu, tropical rum and tequila based cocktails served in tiki mugs. We make our own infusions, shrubs and syrups where possible and have an exciting rum and Bourbon selection,” added Stewart.

.

“We have also added a Cuban cigar menu with help from James Fox cigars of Grafton Street which go well with an old fashioned or premium Bourbon.”

It all sounds amazing so you know where to go for great music, exotic drinks and tasty craft beers in one of Tralee’s coolest pubs.

Roundy’s is open Thursday to Sunday from 6pm, but will be open day and night straight through until the end of the festival.
