THE team behind Croí Restaurant in the Square are busily preparing for their new venture which is set to create around 10 full-time jobs and a few more part-time positions within the next few weeks.

Paul Cotter, Noel Keane and Kevin O’Connor have enjoyed great success since they opened the restaurant back in May 2017.

Now the award-winning restaurant is to move to the former Restaurant Uno/Duffins premises in Princes Street, while a new family restaurant, Grá Bistro, will replace it in the Square.

Chef Paul Cotter will remain in the Square at Grá Bistro which will be a more casual dining, family-friendly experience, while Croí will continue to provide an excellent culinary experience in a whole new setting, with Chef Noel Keane in the kitchen and Kevin O’Connor front of house.

“Grá will be a more family-centred restaurant with burgers, pasta dishes, fajitas etc. done very well for people looking for a more casual dining experience,” said Noel Keane.

“Between the two restaurants we’ll be employing around 25 staff and we have most of the new staff already hired. We intend to close Croí after Mother’s Day on March 31 and reopen it as Grá Bistro just days later. Croí is scheduled to open the following weekend in the new Princes Street premises. It’s a lovely location here and we’ll have more space here for diners, spread over two floors,” said Noel.

Work was in full swing at the Princes Street premises when we called and Noel is promising the new decor will be worth waiting for and will have a vastly changed layout from the previous restaurants which were located there.

The restaurant will have a lounge area just inside the entrance and will have a full bar licence. There is also space upstairs for diners and a separate room which can be booked for more private dinner parties.

This has led to a full time position in this restaurant. Noel has been collaborating with KCFE over the past year and has brought students on foraging and provided cooking demonstrations using the wild herbs and findings from the expedition.

According to Principal of Kerry College of Further Education (KCFE) Mary Lucey “all at KCFE are behind Dale and are delighted to see his hard work and dedication to his career being recognised by this selection in such a high profile competition.  We wish him and Croí every success going forward”.

She acknowledged the dedication and excellent training that KCFE’s teacher Chef Lanigan Ryan gives to her students and the passion for cooking that she instils in them.  A new intake of Professional Cookery Students has just commenced in the College. For more information, contact kerryfe.ie

A NEW restaurant opened on Friday night in The Square, but the night before was an occasion to welcome suppliers, friends and well-wishers to Croí.

Noel Keane, Kevin O’Connor and Paul Cotter served up some wine, beer and canapés to guests who wished the lads well in their venture on the premises which was formerly The Stonehouse.

Croí is based on local, wild and artisan food with an emphasis on seasonal ingredients. Scroll down for photos…

Original ‘Gangsters’ To Create Something Special In Town With New Restaurant ‘Croí’

.

A NEW restaurant opens in the heart of Tralee on Friday night and promises to create incredible  dishes with all the ingredients sourced entirely from Tralee and the surrounding area.

Three members of the well known ‘Tralee Culinary Gangsters’, famous for their blogging and cookery demos around the county, are behind ‘Croí’ which will open in The Square, where The Stonehouse restaurant operated.

Award-winning chef Noel Keane will be joined in the kitchen by the talented Paul Cotter, while Kevin O’Connor will be front-of-house making diners feel welcome.

All three lads know each other for donkey’s years and have a wealth of culinary and hospitality experience under their belts.

Noel has worked all around the world, but more recently in Darcys on Barrack Lane before moving to Eabha Johns in Listowel  about two years ago.

Paul Cotter is coming from the famous Nick’s of Killorglin while, in true ‘Troy McClure’ style, you may recognise Kevin’s friendly and professional attitude from stints in The Daily Grind, The Ashe Hotel and Quinlan’s Fish, whom he helped out in setting up their Kenmare outlet.

“The idea of Croí is based on local, seasonal, wild and artisan food. If we can’t get it locally, we’re not interested,” Noel Keane told me when I called in during the week.

The lads will be using meat from The Well Bred Butcher in Ardfert among other suppliers and  it will all be reared locally. They will grow their own vegetables and herbs, use fish and shellfish from Kerry harbours, the beer will come from Kerry micro-breweries. The wine, however, will come from outside Kerry!

Because of this policy of supporting local, they’re hoping people will support them in the venture.

Using seasonal ingredients means a constantly changing menu which will appeal to foodies. The restaurant will open seven  nights a week from this Friday night and in a couple of weeks they’ll be opening daily for lunch.

While all three have been involved in the beginning of other people’s ventures, it’s the first time any of the three men have gone into business for themselves, which is making it even more exciting that they are realising their own vision of what a restaurant should be.

As for that name, while ‘Croí’ is the Irish word for heart, Noel says they chose it because of its old Irish meaning.

“It actually means ‘the essence of’ in old Irish. That’s what we want this restaurant to be about – the essence of the land, the food at the heart of it.” For reservations, call 066-7185583. Check out their Facebook page here

A CHARITY race night was held in Seán Óg’s bar last night organised by two barmen who are off next month to run the London Marathon.

Fergal Dooley and John Moriarty, are running in the event to raise money for the Irish heart disease and stroke charity ‘Croí’ and a good crowd of friends and well-wishers came down to support the worthy cause.

There was a tote system in place and loads of spot prizes for every race and prizes for best jockey and trainer along with a raffle.

“We got all ten races sponsored by local businesses and we want to thank them sincerely for that,” said Fergal. “We also had over 20 spot prizes which we’re grateful for and we’d like to thank all who came tonight and supported us in the pub quiz before Christmas as well,” said Fergal.

The lads will take their place alongside the 30,000 competitors taking part in this year’s London Marathon on April 24 and preparation for the gruelling event is coming on nicely. They will be part of a group of 250 running for ‘Croí’. All funds gathered will stay in Ireland.
