THE tables are set, the menus are in place and the Dome is ready to welcome almost 1,200 guests for the social highlight of the year in Tralee.
But what exactly goes into making the Rose Ball special. TraleeToday.ie spoke to Ballyseedy native, Sharon O’Donoghue from Brook Catering about what goes into putting on such an event and, most importantly, what’s on the menu.
Also Executive Chef, Greg Murphy, talks about preparing the food for the evening.
