OVER 70 seafood lovers attended a sold-out fundraiser in aid of Fenit RNLI on Wednesday evening at the North Campus of IT Tralee.
The evening provided an opportunity for the Culinary Arts students at the college to showcase their talents and skills in a restaurant style setting by providing a three course dinner with fish prominent on the menu.
The ITT has a long standing fondness for the Fenit RNLI due to the contribution made to both institutions by the late Fr. Gearóid O’Donnchadha.

All the €50-a-head tickets were snapped up quickly and guests enjoyed bubbly on arrival followed by a delicious meal with wine.
The starter was ‘Fenit coastal seafood chowder flavoured with smoked bacon and white wine’, this was followed by the main course of ‘herb-crusted fillet of cod, perched on a tian of winter ratatouille and a cordon of samphire cream sauce, served with glazed carrot and camp potato’.
Dessert was ‘crisp strawberry shortbreads, sweetened cream and sauce anglaise’ with tea and coffee.
Fenit Lifeboat Fundraising Chairman Mike O’Connor, was delighted with the event.
“It was a fantastic night which was really well supported. We’re very thankful to IT Tralee for sponsoring the meal and all funds go to Fenit RNLI. Events like this are the only source of funding we have and it costs around €100,000 a year to run Fenit Lifeboat.” Scroll down for photos…
